The "Nisei Kitchen" Cookbook

Culinary Heritage of a Generation

Nisei Kitchen
"Nisei Kitchen" is a compilation from members of the St. Louis Japanese American Citizens League. Originally written in 1975, the cookbook has been been reprinted seven times. The collection represents Japanese, Polynesian, and Chinese recipes.

The cookbook was dedicated as follows:

"From our ISSEI parents, the first generation of Japanese to live in America, we NISEI, the second generation, lovingly transmit the miracle of life and richness of heritage to our children, the SANSEI, or third generation."

The book contains over 150 recipes categorized by culture and taste, is over 200 pages in length, and costs $11. To order "Nisei Kitchen," email Anne Mitori, the chapter's vice president of membership.


More Than Just Recipes

"Nisei Kitchen" includes several informative articles:
  • About Japanese Food briefly describes the evolution, heritage, and culture of Japanese cooking.
  • Gardening explains how "growing your own" can add authentic flavor to your meal, and even provides tips on soil preparation. The tastes and uses of vegetables and herbs from aromatic Shungiku to Takana are described.
  • Planning a Japanese Meal discusses the components and development of the traditional meal.
  • Tea describes "the most important beverage of the Japanese," including how to prepare tea properly, and the four major kinds of Japanese tea.
